How to make Apricot Pineapple glazed Chicken Drumsticks
- 6 Chicken legs
- Ginger powder
- ½ Cup apricot preserves
- 3 Tbsp crushed pineapple, with juices
- 1 tsp Ginger powder
- ½ tsp Vanilla extract
- 1 Tbsp brown sugar
1. Sprinkle chicken legs with ginger, cumin and salt to taste. Bake at 350 for about 12 minutes, until just done- 165 degrees (Juices will run clear).
2. In the meantime, combine the rest of the ingredients in a microwave safe bowl and microwave for 30 seconds. Mix well.
3. Take the chicken out of the oven, and glaze the chicken with the apricot sauce. Place back in the oven for 5-7 minutes, until the sauce coats the chicken.
Helpful Idea: Mix some rice with peas and carrots, season with paprika and garlic for some colorful rice to go with your tropical chicken!
